Salads nowadays go way beyond leafy greens and tomatoes. With a bit of imagination, you can create a salad in less than 20 minutes, which will keep you filled up throughout the day, and is as nutritious as any other meal.
The idea here is to think outside the box. What you’re looking for apart from the classic tomato, lettuce, olive, and beets is to add some roasted vegetables, cheese (feta or grilled halloumi), avocado, couscous, or quinoa and bulgar wheat.
8. Rice dishes

The easiest is probably egg fried rice, which you can make more interesting by adding vegetables and/or meat. Another option is to cook a risotto or even risotto balls, though it might take slightly longer to prepare.
