5. Crni rizot
This specialty risotto is commonly served in the coastal areas of Croatia, where seafood is plentiful. Crni rizot is a version of risotto made primarily with fish stock as the liquid ingredient, but its amazing black color comes from squid or cuttlefish ink, which is added sparingly, but to great effect. Chunks of fish, and whole shellfish are then stirred into the dish. It’s a great way of tasting the bounty of Croatia’s seaside.
