Fuunji ramen-ya, which is located in the Shinjuku district of Tokyo, is well-known around Japan for their take on tsukemen-style ramen. Unlike most bowls of ramen, if you order tsukemen, you’ll receive the noodles in a separate bowl from the broth, and the diner is meant to dip each mouthful of noodles into the broth themselves before consuming.
Fuunji’s broth is extremely flavorful, and benefits from layers and layers of fish flavor that comes from using flesh, bones, and roasted skin. There’s usually a lineup that stretches out the door, but the turnaround within the dining room is quick, so you’ll be slurping noodles in no time.
