It’s extremely unusual to see an authentic ramen-ya anywhere other than Japan, but Slurp Ramen Joint, which opened in Copenhagen in 2017, is churning out amazing bowls of ramen, made with imported Japanese seafood, and locally farmed pork. One of their secret ingredients is cep mushrooms, which gives the broth an unusual umami flavor, and boosts the intense richness of the pork and kombu flavors.
Slurp even makes their own noodles in-house, using a locally made flour which includes a small percentage of rye to make the noodles even heartier.
