4. Deep Fried Alligator’s Egg Nest
This dish combines the classic State Fair love of deep frying with exotic game meat, plus some French fries thrown in for good measure. Alligator meat is minced and added to a hash of fried onions, jalapenos, cheese, and garlic. Then, small “eggs” are formed from the mix, breaded, and deep fried until crispy and golden. Then, the eggs are placed in a “nest” made out of French fries, and drizzled in a delicious chipotle dipping sauce.
