Cultured Palate: Dishes from France

Pissaladière

Pissaladière is a classic dish that originates in Nice, in the south of France. It’s a popular appetizer, usually cut into strips and served as a quick snack. Pissaladière consists of bread dough, stretched thin to resemble a pizza crust, which is then covered in a mix of sweet, soft caramelized onions, olives, and either whole anchovies or anchovy paste.

It reflects the Mediterranean influences on this area. Nice is one of France’s largest waterfront port cities.
