Ratatouille

Most people know ratatouille from the adorable Pixar movie which starred the voice of Patton Oswalt as a tiny rat chef. Actual ratatouille, the dish that inspired the movie title, is a Provencal dish that combines stewed tomatoes, zucchini, eggplant, peppers, and onions until all of the vegetables are perfectly creamy in texture.

There are many different preparations methods for ratatouille, and all of them require plenty of time for the vegetables to break down, and become tender and succulent.
