Sambar

A popular South Indian dish, which is often added to a dosa plate, is sambar. Sambar is a type of curry which uses tamarind as a base, giving it a pleasingly sour note that contrasts with the heat from the spices.

There are many different types of sambar, but some common vegetables additions are okra, carrot, potato, pumpkin, or radish. In coastal areas where coconut trees thrive, coconut sambar is a popular variation. Typically, sambar is served with a starch like rice, dosa, or idli – a steamed cake made of rice and black lentil flour.
