Cultured Palate: Dishes from India

Dahi vada

Dahi vada are a popular snack in northern India, and are incredibly versatile. Dahi vada are fried lentil dumplings, which are covered in a refreshingly sweet yogurt dressing and drizzled with a spicy tamarind chutney. Often, they’re topped with additions like coconut, pomegranate seeds, or fresh ginger depending on the region, and the time of year.

The dish is popular both as a solo snack or as a side dish for a larger meal. To find the best version of this dish, look for dumplings that have been soaking in the yogurt for a long time. This gives it an amazingly soft consistency, and ensures that the flavor of the spiced yogurt has penetrated to the centre of the dumpling.
