Seffa is a dish made of steamed vermicelli noodles, which are turned into a sweet side dish with the addition of sugar, raisins, butter, and ground fried almonds. It’s a great palate cleanser after a spicy dish like chicken or lamb tajine.

While it may seem like a simple dish, the fact that the vermicelli has to be steamed multiple times makes it slightly more time-consuming. If you want to make this into a main course known as seffa medfouna, you can add your favorite type of meat, flavored with spices, and hide it in the middle of the pile of steamed vermicelli.
