5. Zaalouk

Another popular salad that can be found on Moroccan tables during the mezze salad course is zaalouk, a hot salad made of stewed eggplant combined with tomatoes and spices. It can be served before the main dish or as a side. If you want to vary it up, squeeze some lemon juice over the dish, or add some chili oil right before serving.

Zaalouk is similar to other Middle Eastern dishes with eggplant, such as the warm dip baba ghanouj. Some people have called it Morocco’s answer to ratatouille as you can add in roasted red peppers or chopped zucchini, depending on your preference.
