Cultured Palate: Dishes from Spain

Albondigas
Another tapas dish that you’ll see everywhere in Spain are albondigas – Spanish-style meatballs that are served in a little puddle of savory tomato sauce. You can eat the meatballs plain, but you’ll be missing out on all that delicious sauce if you don’t use a piece of bread to sop up the delicious remains.
Other than ground meat, albondigas often contain uniquely Spanish ingredients like shaved Manchego cheese and chopped jamón Iberico, which bring a unique taste to these delicious little bites.
