The Filipino dish known as sinigang is incredibly popular all across the country. I t’s a one-pot, sweet and savory soup that can accommodate whatever meat you happen to have on hand. It’s most commonly made with pork or chicken, but can made with fish, shellfish, or even beef, and flavored with a variety of different sour fruits like tamarind, calamansi, or green mango. It’s often served with a side of fish sauce, which can be added to the soup for a dash of umami flavor.
