Did you know that most of the time in Vietnam, phở is eaten for breakfast? It’s a testament to how good this dish is that people are happy to eat it for any meal of the day. Although phở actually refers to the wide rice noodles that are a signature of this dish, the name eventually came to refer to the dish as a whole.
A good bowl of phở should contain a healthy helping of noodles, but what really makes it stand out is the broth. The broth should be simmered for hours. The result is deeply flavorful, with the rich taste of meat, but also the subtle aroma of spices and herbs. The best phở restaurants and stalls in Vietnam will sell out before lunch. So, if you want the best, make sure to get there early.
