Menemen is known in North America as Turkish scrambled eggs, but really, it’s so much more than that. In menemen, the vegetables are sautéed with oil and spices until cooked, then the eggs are added to the pan and scrambled until just barely set. This allows the buttery, rich egg to complement the fiery peppers.

Traditionally, this dish is served with salty cheese or olives and a side of crusty bread, which sops up the egg mixture. Any pepper will do for this dish, but use Aleppo pepper if you can find it and paprika if you can’t.
