Tamagoyaki
Tamagoyaki is known as a Japanese omelette, but to call it that diminishes its delicate construction and delicious taste. To make authentic tamagoyaki, it’s easiest to use a purpose-built pan called a makiyakinabe. It’s long and rectangular, which allows the chef to make a long, thin ribbon of egg.
This is then folded on itself to make a loaf which is sliced into pieces for serving. In Japan, there are many different ways to prepare this dish, some of which include additional ingredients like shrimp puree or grated yam.
