Egg Curry
Egg curry is a dish that originates in the Punjab region of India. It’s the perfect dish if you’re craving flavor and protein, but don’t necessarily want to spend all night over a stove. A base of curry is made with the chef’s choice of vegetables and spices, then several fried hard-boiled eggs are dropped into the sauce. This curry is generally eaten over rice or with paratha, roti, or naan.
