Challaw Kadu
You may be surprised to know that pumpkin dishes are even eaten in countries like Afghanistan. This local dish goes by a few names and can be called kadu, kadoo, or kaddo.
It is made by frying pumpkin in a range of spices and serving it with a kind of garlic yogurt. The dish is then garnished with finely chopped mint, making it both sweet and savory in flavor thanks to the natural sugars in the pumpkin.
