Locro – Peru

South American comfort soups are more similar to their northern counterparts than we may think. Locro is a potato and cheese soup found not only in Peru, but also Ecuador. This dish has been around since before the time of the Spanish invasion, so when you take a bite of this soup you taste the same flavors as those in ancient times.

Easy to make and quite delicious, locro’s ingredients include potatoes, cheese, onion, garlic, butter, and milk. Serve it with bread and you have a comfort dish fit for the coldest of days.

Fun Fact: Argentina has their own version of locro, but it is made with meat and vegetables.
