Springfield Chilli
Although it’s not vastly different than many other types of American chili, Springfield chilli (spelled with two ‘l’s) is fiercely defended by its fans. In 1993, the state legislature of Illinois declared Springfield the ‘Chilli Capital of the Civilized World’, primarily due to the influence of Joe DeFrates, a Springfield cook who won both the National and the World Chili Championship. His family recipe, which became the de-facto Springfield chilli, contains coarsely-ground beef, Hunt’s canned tomato sauce, and a proprietary mix of spices. The chilli has been sold by their family since the early 20th century, and can be found in many local grocery stores. It’s often served over a hot dog bun, which helps to mop up some of the grease.
