Chile Verde
New Mexico has a distinct advantage in their chili cooking — they’re right in the heart of chile pepper country. One of the signature flavors of New Mexico is the green chile — most typically, a chile that’s grown in and around the village of Hatch, New Mexico. These Hatch chilies form the base of traditional New Mexican Chile Verde, which typically starts with chunks of pork instead of beef, and uses fresh peppers to create that signature flavor. The rich pork softens with hours of cooking, and shreds right into the stew to make every bite flavorful. Chile Verde gets its bright color from the peppers, but also from tomatillos, and from a healthy serving of cilantro, which is included in the dish and is often used as a garnish on top.
