Peach Melba
In addition to the Pavlova, the Australians have also created a second dessert that pays tribute to a legendary artist- the Peach Melba. To finish off a dinner honoring famed Australian-born opera diva, Nellie Melba, the head chef filled a gigantic swan sculpture with vanilla ice cream topped with peaches, and the Peach Melba was born. Now, most people add a dollop of raspberry jam or red currant jelly to round out the dish.
