In New Mexico, burritos usually come smothered with either green or red chili sauce — or you can order it Christmas-style, and they’ll spoon both on to your plate. At The Pantry Restaurant, a Santa Fe institution, you’ll receive your burrito on a hot iron plate, smothered in chili sauce with a thin layer of broiled cheddar cheese on top. The other fixings (rice, lettuce, tomato, and refried beans) are piled along the side of the plate — the only thing that’s wrapped inside the tortilla is the meat. Carne adovada is one of their specialties and should definitely be the first thing you try here.
