Taktouka is a hot salad that’s a popular appetizer for formal Moroccan meals. Made up of primarily tomatoes, onions, and spices, the components are either served fresh or stewed in olive oil. In Morocco, most meals begin with a selection of small plates of different salads called a mezze, and taktouka is always featured in this course.
