Zürcher Geschnetzeltes

As you may have guessed from its title, Zürcher Geschnetzeltes was first eaten in Zurich. In English, Zürcher Geschnetzeltes means “sliced meat, Zurich style.” The dish is made with veal and kidneys that are cut into slices and sautéed with butter and chopped onion until cooked through.

Right before serving, the chef deglazes the pan with cream and white wine, and the entire mixture is cooked down until the liquid forms a smooth sauce. Mushrooms are added towards the end, and the meal is usually accompanied by rösti, spaetzle, or mashed potatoes.
