Cultured Palate: International Dishes from Switzerland

Älplermagronen

This delicious dish encompasses the most delicious parts of Swiss cuisine — apples, cheese, pasta, and potatoes. In English, Älplermagronen is translated as “Herdsman’s Macaroni,” and is made with cheesy, Emmentaler-laced pasta mixed with potatoes and bacon, and covered in sweet sautéed onions. Although these ingredients seem like they don’t work together, each ingredient is cooked to perfection and eventually combines to make a delicious, savory-sweet dish. For many Swiss citizens, there’s no food more comforting than a bowl of warm Älplermagronen.
