Sopa de Albondigas – Mexico
Before we fly back home, we have one last stop in the flavorful nation of Mexico for some sopa de albondigas. Although served with pizza or spaghetti in America, meatballs in Mexico are served with mild chipotle sauce, rice and beans, omelets, or in a broth with veggies and chilies.
Who can say no to the delicious taste of Mexican meatballs in a tomato broth soup? We can’t, and you won’t be able to either once you dig in!
Pro Tip: Mix some chorizo into the meatball for an extra flavor punch.
