Avgolemono – Greece
Greece – just a hop, skip, and a jump from our last stop – brings a whole other level of taste to our trip. Avgolemono is a hearty soup made with lemon, chicken, rice, and thickened with egg yolk. Just add orzo, rice, or pasta and you have yourself a hearty Greek soup to heat your soul.
Although credited to the Greeks, this recipe may have originated from an Iberian Jewish dish called agristada. Whether you cook your own chicken beforehand or opt for rotisserie, avgolemono is a quick meal that will satisfy just about everyone in the family.
Fun Fact: Before lemon was used for souring, avgolemono used to be made with pomegranate or bitter orange juice.
