Cultured Palate: Dishes from Germany

Berliner Weiße
Berliner Weiße is a sour beer that originates in the north of Germany, and is fermented with yeast and lactic acid. This fermentation causes the distinctive sour taste, which many people enjoy, but some find overwhelming.
If you’re in the area and you want to try an authentic Berliner Weiße, ask for a bottle of Berliner Kindl Weisse, which is still made by a brewery in Berlin. If it’s too sour for you, do what many Berliners do and add a dash of sweet raspberry or woodruff syrup.
