Dondurma

Some people called dondurma ‘Turkish ice cream’, but that label doesn’t really do this confection justice. Dondurma is a dessert made with cream, flavoring, and two ingredients that are unique to this part of the world — mastic and salep. Salep is a powder made out of wild orchid tubers which gives the dondurma its characteristic thickness. Mastic is sap that comes from the mastic tree and makes the mixture very stretchy and chewy. Many vendors advertise their wares by pulling and stretching huge masses of dondurma in gravity-defying ways until the mixture is pliable. Popular flavors include standards like chocolate and vanilla, and fruity flavors like raspberry, cherry, and mulberry.
