While consuming alcohol isn’t popular in Ethiopia, many families will brew their own tej, a traditional honey wine. Tej is similar to North American mead, but it often has an extremely high alcohol content (depending on how long it was allowed to ferment) masked by its sweet taste. Honey is a primary ingredient, but it’s also flavored with gesho, a bitter herb native to Africa that has a similar taste to hops. Tej is usually served in a traditional glass drinking vessel called a berele.
