6. Tibs
Tibs is another type of stewed meat – generally beef or lamb – made with larger cuts of meat than wat. Typically, the meat is cubed, browned, and sauced in a delicious gravy made with berbere spice mix before being served over injera. The berbere spice mix, which includes both cultivated and wild spices like rue, basil, ajwain, korarima, and fenugreek, can be adjusted to taste depending on how much heat you can handle. Tibs is often served on special occasions or as a sign of respect for a visitor.
