7. Ful medames
Although ful medames is a staple in Ethiopia, it was actually brought to the country from Egypt, where it has been a major part of their culinary tradition since before the pyramids were built. Ful medames is made by slow-cooking fava beans until they’re tender, then spicing them with different types of oil, spices, chopped fresh herbs, and vegetable. Ethiopia has put its own spin on ful medames, spicing the dish with berbere and commonly eating it with injera and hard-boiled eggs.
