9. Gored-Gored

Another raw meat dish popular in Ethiopia is gored-gored, which is essentially just tender chunks of raw meat served with a spicy dipping sauce called awaze. In Ethiopia, raw meat is thought to be incredibly rich in nutrients, leaving you fuller longer than if it were cooked. Raw dishes like kitfo and gored-gored are best eaten at specialized restaurants known as siga bets (meat houses). These are part slaughterhouse, part dining room and serve only meat. Siga bets are steadily gaining popularity in Ethiopia’s bigger cities, but most families still prefer to slaughter the animal and prepare their meat by hand than eat these dishes in a restaurant.
