4. Kinche

Almost every culture has a favorite hot breakfast cereal, and Ethiopia is no different. The one Ethiopians reach for every morning is kinche – cracked wheat boiled in either milk or water. It can be left plain and eaten like oatmeal or placed into a pan with some onions and fried in niter kibbeh. The resulting kinche is spicy and more flavorful than plain boiled cracked wheat. If there’s any leftover, it’s often saved for the evening meal and eaten with injera.
