Pumpkin Korokke

This is another pumpkin dish that comes courtesy of Japan. Related to Spanish croquette, korokke is the name for different forms of Japanese patties that are deep fried. Mainly they are made with minced meat, but you can also get an all-pumpkin version of korokke in Japan.

The pumpkin is cooked and mashed before being rolled into a patty shape and then dusted with flour. The patties are then deep fried, giving them an amazingly crunchy exterior. They are a perfect snack for vegetarians. The idea of pumpkin croquettes is not actually unique to Japan as you can find them all over Asia, in countries like China and Singapore.
