6. Kiviak – Greenland
Kiviak, which hails from Greenland, is often eaten around the holidays by Inuit Greenlanders simply because of the weather. It’s a dish that’s rich in protein and healthy fats for when hunting simply isn’t an option.
To prepare kiviak, hunters stuff hundreds of whole birds called auks into a seal carcass, which is then sealed with fat to prevent air from spoiling the meat. The seal carcass is buried underground for at least three months. The result is a deeply fermented meat that many people say tastes like stinky cheese.
