Khao Soi
This dish also borrows from Lao cuisine, and is primarily found in northern Thailand. Khao soi is a delicious noodle soup, made up of a coconut milk curry broth which hides a pile of often-homemade noodles and stewed meat. It’s a popular street food, frequently topped with a flourish of deep-fried noodles for crunch, and a handful of shallots. This dish truly has to be the best of both worlds for Thai cuisine — a delicious curry mixed with coconut milk, plus eminently slurpable noodles.
