Ramón Freixa – Madrid
Mixing traditional Catalan flavors with the techniques of molecular gastronomy, Ramón Freixa has put together an amazing menu of gorgeous little bites that are designed to fool your eyes. His eponymous restaurant is tiny, as to allow him to personally cater to each guest, often presenting plates himself before scurrying back into the kitchen to continue cooking.
Catalan ingredients are front and center, but not in their usual forms. Manchego cheese melting from a stone, and Iberian squid sushi are two dishes that have delighted guests in the past. The tasting menu changes nightly, so expect some surprises.
