Cultured Palate: Dishes from Greece

Souvlaki
Souvlaki is a fast food that can be found all over the world, but its popularity isn’t a recent phenomenon. Greek people have been eating souvlaki for centuries, as evidenced by the purpose-built grills excavated in Santorini which date back to the 17th century.
Souvlaki couldn’t be simpler – grilled chunks of meat (usually pork, chicken, or beef) are served either in a pita, or on a bed of rice with a variety of side dishes. Usually, tzatziki will accompany all types of souvlaki – the garlic-y bite of the sauce is the perfect accompaniment to the smoky, grilled meat.
