Lamb Kleftiko

Lamb kleftiko is a dish made with lamb and potato which is wrapped in parchment and baked in its own little package so that the veggies all absorb the delicious meat juice. This dish is as rustic as it gets, and may be hard to find in some of the larger Greek cities.

Luckily, there are plenty of places that still serve authentic kleftiko on some of the smaller islands in the Mediterranean. On the island of Rhodes, there’s a small restaurant called Mama Sofia’s that serves only kleftiko – and if you get the chance to try it, you’ll know why.
