Andouillette Sausage
True Andouillette sausage is almost impossible to find outside of France, and as a result devotees have been forced to travel great distances to find this unique meal. Traditionally made with coarsely chopped intestines, tripe, wine, and onions stuffed into the colon of a pig, andouillette is often enjoyed with vegetables in a mustard or red wine sauce. Andouillette sausage is a traditional dish of the Troyes, Lyon, and Orléans regions of France.
