The region of Brittany is well known for their two popular varieties of crepes: Galettes (savory crepes made with rustic buckwheat flour) and traditional crepes made with white flour. Buckwheat galettes have started to creep their way across France in recent years, making them almost as popular as sweet crepes with whipped cream, or sugar and lemon. Popular fillings for buckwheat galettes are egg, ham, cheese, and spinach, but diners can choose any filling they want to compliment the rustic heartiness of the buckwheat flour.
