4. Longjing Shrimp
Another unique dish representative of the culinary history it hails from is Longjing shrimp: tiny river shrimp coated in egg whites and starch, then fried and finished in a mixture of water and Longjing tea leaves. In North America, Longjing tea is often sold under the name Dragon Well. The flavor of the tea only briefly infuses the shrimp, imparting a delicate, light aroma. This dish is popular within the Zhejiang cuisine of the Hanzhou region, where Longjing tea was first cultivated.
