5. Jiu Zhuan da Chang
Shandong cuisine is one of the oldest culinary traditions in China, and its techniques have been refined and perfected over the years, never straying too far from its ingenious origins. Many Shandong dishes are prepared over extremely high heat, which locks in flavor and prevents the ingredients from absorbing too much oil. Food is served steaming hot, and seasonings like spices and herbs are added at the end. One of the most famous dishes in Shandong cuisine is jiu zhuan da chang, a strongly flavored pig’s intestine braised in soy sauce.
