Hot Vit Lon
This is a dish for adventurous eaters only. Hot vit lon are fetal duck eggs that are served in the shell, and are usually accompanied by pickled garlic. You can choose the degree of maturity of your egg, so if you’re just starting out you may want to ask for an egg that’s younger. The general rule of thumb is to pick an egg around 14 days if you’re squeamish or closer to 21 days if you don’t mind a bit of beak.
