Cao lầu refers to a special type of noodle dish that’s not only native to the city of Hội An, but literally can’t be made anywhere else. To be authentic, the cao lầu noodles have to be soaked in water from a secret local well, to which lye made from ash originating from trees cut down in the Cham Forest outside of Hội An, is added.

It seems complicated, but if you taste these noodles, you’ll probably forget about the hassle in an instant. The noodles, which are served in broth garnished with herbs and pork slices, have a unique chewiness and bite that’s impossible to replicate.
