When you think of the Middle East you may think of many other dishes before noodles, but ash reshteh is one of the quintessential Persian comfort foods. The base of the dish uses linguine style noodles mixed with khask, which is a kind of Persian whey.

To make the soup even more hearty, lentils, chickpeas, turmeric, and spinach are added before parsley is sprinkled on top. As the dish usually eschews meat, it is the perfect option for vegetarian diners. It also has the added bonus of being thought to bring good luck to those who eat it. For that reason, it is often the centerpiece of a Norouz feast which celebrates the Persian New Year.
