4. Cactus Fries

Another Southwestern favorite is cactus fries. Nicknamed nopales, this side dish is made from pieces of the Opuntia species of cactus that are battered in buttermilk and flour then deep-fried. If you’ve never tried nopales before, their tart taste is similar to green beans – you’d never realize you’re eating a cactus! In Arizona and New Mexico, it’s common to see cactus fries served alongside prickly pear sauce, which is a sweet-and-sour sauce made from the sweet fruit of the Opuntia cactus. In Mexico, nopales are a common menu item, but they’re a little harder to find stateside.
