9. Stacked Blue Corn Enchiladas

Blue corn and red chili are two flavors that pair well together, and it’s easy to find enchiladas made with blue corn tortillas smothered in red chili sauce all over New Mexico and Arizona. Unlike their Mexican counterparts, New Mexican enchiladas are often found “stacked,” or layered like a cake so the veggies, chili sauce, and tortillas top one another. In addition to a bed of sauce, blue corn enchiladas come topped with cheese, sour cream, and a fried egg.
